turkey taco bites

In need of a last minute Super Bowl recipe? Look no further than these delicious Turkey Taco Bites! The combination of the soft and crispy puff pastry with the flavorful taco filling is….*chef’s kiss* and will have your party patrons begging for more! Takes less than 30 minutes to make too, making this a winning combination.

Ingredients:

  • 1 package frozen puff pastry (enough to make 12 squares to fill each muffin tin)

  • 12 oz ground turkey (93% lean)

  • 1 can of rotel with green chilies, drained

  • 1 package of taco seasoning

  • 1/3 cup shredded Mexican cheese, reduced fat

  • Cilantro, chopped

  • Green onions, chopped

  • guacamole, nonfat Greek yogurt, and salsa for dipping!

Directions:

  1. Preheat your oven to 350*. Thaw your puff pastry according to directions. Once thawed, slice into 12 equal squares and add each square to a greased muffin tin.

  2. Prepare your taco filling. Brown your ground turkey until cooked through, and then add in the taco seasoning along with a few tbsp of water to ensure the turkey is fully coated. Once coated, add in 1 small can of the rotel (drained! otherwise it will be too watery) and cook for a few more minutes.

  3. Fill each puff pastry with an equal amount of the taco filling, and top with a bit of the shredded Mexican cheese.

  4. Bake the taco cups for 12-14 minutes, or until cheese is melted and puff pastry is slightly browned.

  5. Top with fresh cilantro and green onions, and pair with your favorite taco toppings like salsa, guacamole, and nonfat Greek yogurt!
