Better late than never, right? Finally decided to jump on the viral Cowboy Caviar trend and I am kicking myself for doing it sooner! This salsa/salad is packed with alllll the nutrients and is great for meal prep! I’ve been adding it to greens, rice, and even just eating it straight from the bowl. My take on the recipe below! Makes 8 BIG servings.

Salty snacks was a popular request when I asked y’all what things you wanted to see from me the other day! Thought this would be the perfect excuse to debut my Dot’s Pretzels Dupe. I tried out a lighter version of my FAVORITE snack using one of my go to healthier snack brands, @fromthegroundup! By using their Butternut Squash Pretzel Twists, I was able to keep these pretzels gluten free for my gluten intolerant friends, and they have macros that are easier to fit into my day. These would be a hit at any holiday gathering paired with a ranch based dips.

This ‘za was originally inspired by a pizza with fresh figs and prosciutto but, my grocery store had neither of those items in stock when I went. So, we *improvised*. To make this pizza a bit more “macro friendly”, you could sub chicken for the pancetta, giving your pizza a little lean protein boost, as well as use fresh figs instead of the preserves. This recipe makes ONE personal pizza, but is super easy to double.
