cauliflower gnocchi chicken parm

A lightened up version of a classic! this recipe is so easy and great for an easy weeknight dinner. serves 3!

Ingredients:

  • 3 servings of just bare chicken chunks (or similar lightly breaded chicken), air fried

  • 1 bag of Trader Joe’s cauliflower gnocchi, air fried

  • 1 jar of marinara

  • 1 cup reduced fat mozzarella cheese

Directions:

  1. Preheat oven to 350

  2. Air fry your cauliflower gnocchi & chicken chunks.

  3. Add cooking spray or olive oil to an oven safe skillet.

  4. Pour in 1/2 of the marinara, add your chicken and gnocchi, and then add the other 1/2 of the sauce.

  5. Top with the cheese, and cook in the oven for 15 minutes, or until cheese is melted and bubbly.

  6. Finish off with chopped basil and serve with your favorite veggie!
