cheesy baked fajitas
One pan, easy oven baked chicken fajitas! perfect for weeknights when you’re short on time – only takes 35 minutes! We love putting this over rice with some salsa and avocado.
Ingredients
1 lb chicken breast, sliced
3 bell peppers
1 white onion
4oz reduced fat cream cheese, softened
4oz nonfat greek yogurt
1 packet taco seasoning
2 cups reduced fat Mexican cheese
Salt, pepper, and garlic powder to taste
Directions
Preheat your oven to 350*.
Slice up peppers and onions, and season with ½ of the packet of taco seasoning, salt, pepper, and garlic powder. Set aside.
Combine cream cheese, greek yogurt, and taco seasoning in a bowl.
Slice your chicken breast into strips and then coat in cream cheese mixture.
In a large greased baking dish, layer in bell peppers and onion mix, coated chicken, and then top with reduced fat cheese. Cover with aluminum foil.
Bake for 35-40 minutes, covered.
Remove from oven, add any additional toppings or put into tortillas and enjoy!
