cilantro avocado salmon bowl
Y’all already know my love for foods in bowls. I am not sure when the bowl obsession started, but if I can make it a bowl – I’m game. The thing I love most about them, is that it’s easy to ensure you’re hitting all of your macros, but can get creative while swapping out the base, protein, fat sources, etc. One of my favoriteeee bases is my “Chipotle Rice Dupe” because it pairs so well with all sorts of flavors and is so easy to make. Read below for the rice recipe, and to see what all is in this DELISH salmon bowl!!
Bowl Deetz (serves one):
macros: 28g c // 15g f // 40g p
#WhatsInMyBowl
6 oz grilled salmon, marinated in a little lime juice, seasoned with garlic powder, salt, pepper, oregano, and onion powder]
1/2 cup of chipotle rice dupe (details below)
1.5oz avocado
1/2 medium zucchini, chopped and sauteed
1 cup spinach, sauteed with zucc
1.5 tbsp Bolthouse Farms “Cilantro Avocado Yogurt Dressing” (lots of dupe recipes on the internet if you don’t have this!)
sprinkle of fresh cilantro on top
How to make the rice:
Needed: 8 servings of jasmine or basmati rice, 1 lime, 1/2 lemon, salt, garlic power, cilantro, and olive oil
1. Prep your rice according to directions. We use jasmine rice! I make 8 servings of it at a time, so these directions are for 8 servings. You can adjust based off how much you’re making!
2. Once rice is cooked and fluffed, add in the juice of one lime, 1/2 lemon, 1 tsp garlic powder, 1 tsp salt, and 5 tsp olive oil. Stir well.
3. Once the seasoning and oil is mixed in well, chop up 1/3 cup worth of fresh cilantro and FOLD IT IN DAVID.
4. That’s it! Rice is done and tbh I like mine better than Chipotle 😜
Enjoy y’all! 🤍
