You can serve it cold with tortilla chips or fresh-cut veggies, bring it to your next BBQ, or portion it out for a satisfying snack throughout the week. It makes four huge servings, but can easily be split into smaller portions for a lighter appetizer.

Ingredients:

  • 1 cup cottage cheese, blended smooth

  • 2 containers (5.3 oz each) nonfat Greek yogurt

  • 1 bag frozen corn

  • ½ tbsp lime juice

  • Zest of 1 lime

  • ¼ cup diced pickled jalapeños

  • 3 tsp Trader Joe’s Elote Seasoning

  • 2 tsp garlic powder

  • ½ tsp paprika

  • ¼ tsp chili powder

  • Salt & pepper to taste

  • ¼ cup reduced-fat feta cheese

  • A few sprigs of fresh cilantro, chopped

Optional toppings: Extra cilantro, feta, elote seasoning, lime juice, and lime zest

Directions:

  1. Char the corn:
    In a frying pan, drizzle a little oil and sauté the frozen corn. After a few minutes, season with 1 tsp garlic powder, paprika, chili powder, salt, pepper, 1 tsp elote seasoning, and ½ tbsp lime juice. Cook until slightly charred, then stir in the diced jalapeños and cook for another 2–3 minutes. Set aside.

  2. Mix the base:
    In a large bowl, combine the blended cottage cheese, Greek yogurt, remaining elote seasoning (2 tsp), 1 tsp garlic powder, chopped cilantro, feta, and juice from half the lime. Mix until smooth and creamy.

  3. Combine & serve:
    Stir in your charred corn and jalapeño mixture until everything is well incorporated. Transfer to a serving bowl and top with extra cilantro, feta, lime zest, and a sprinkle of seasoning.

  4. Serve cold with tortilla chips or veggie sticks.
