sweet bbq turkey meatballs
I love these turkey meatballs so much for weeks when I know I want grab ‘n go lunches that are also versatile! These are great to have over rice, with veggies, or even in a sandwich. They’re SO easy to make too, and hold up well in the fridge—perfect for meal prep!

**Macros will depend on how many meatballs you make. I made 26 with my scoop!
Ingredients:
19 oz Ground Turkey (93% lean)
1/4 cup Italian Style Breadcrumbs
1/2 White Onion, Chopped
1 tsp garlic powder, 1 tsp Italian seasoning, salt + pepper to taste
1 Egg
1/4 cup Apple Cider Vinegar
1/2 cup Sugar Free BBQ Sauce (I like G Huges)
Directions:
Start by prepping your turkey meatballs! Preheat your oven to 400*, and line a baking sheet with parchment paper.
In a large bowl, mix your ground turkey, chopped onion, breadcrumbs, seasonings, and egg until thoroughly combined.
Once everything is combined, use a cookie dough scoop or spoon to scoop out 1 inch-ish sized meatballs on to your baking sheet. I like to go in and roll them after scooping them out.
Bake your meatballs for 15-18 minutes, checking around 10 minutes and adjusting time accordingly. The key is to not overbake, but to ensure they are cooked all the way through.
While your meatballs bake, make your sauce. Combine the BBQ sauce and the ACV. I like adding the vinegar to add a little sweetness, plus it helps thoroughly coat all of the meatballs without having to use tons of sauce!
Once meatballs are cooked, toss them in the sauce. You can toss them simply just in a bowl, OR you can add the sauce to a pan and simmer the meatballs in the sauce for a few minutes to really enhance the flavor. Whichever works for you!
After meatballs are sauced, top with dried parsley, add to rice or veggies and enjoy!
