Macro-Friendly Chicken Fried Rice

It comes together in about 15 minutes using a few frozen and fresh ingredients, making it perfect for busy weeks when you want something quick, delicious, and macro-friendly.

Ingredients

  • 1 lb boneless, skinless chicken breast, diced

  • 1 tbsp sesame oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and pepper, to taste

  • 2 packages Trader Joe's Frozen Jasmine Rice

  • 1 bag (10 oz) frozen cauliflower rice

  • 2 cups frozen peas and broccoli

  • 1 cup shredded carrots

  • 2 whole eggs

  • 1 cup liquid egg whites

  • ¼ cup low-sodium soy sauce

  • 1 tbsp rice vinegar

  • 1 tsp sriracha (optional)

  • Green onions, for garnish

Instructions

  1. Heat sesame oil in a large skillet over medium-high heat.

  2. Season the diced chicken with garlic powder, onion powder, salt, and pepper and a little soy sauce. Add to the skillet and cook for 5-6 minutes, or until fully cooked.

  3. Add the frozen peas and broccoli and cook for an additional 2-3 minutes. Add in the carrots and cook for another few minutes.

  4. Push the chicken and vegetables to one side of the skillet. Pour in the eggs and egg whites and scramble until fully cooked. I like to scramble them before I pour.

  5. Add the frozen cauliflower rice directly to the skillet. Cook for 3-5 minutes, stirring occasionally, until the excess moisture has evaporated.

  6. Microwave the Trader Joe's Frozen Jasmine Rice according to package directions and add it to the skillet.

  7. Pour in the soy sauce, rice vinegar, and sriracha, if using. Stir until everything is evenly combined and heated through.

  8. Garnish with green onions and divide evenly among 4 meal prep containers.

Storage

Store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for 1-2 minutes before serving.
