Ingredients (Makes 4 Crunchwraps)
1 lb 93% lean ground beef
1 packet low-sodium taco seasoning
4 large (10-inch) Carb Balance tortillas
4 small (6-inch) Carb Balance tortillas
1 cup reduced-fat shredded Mexican cheese
1 cup shredded lettuce
1 medium tomato, diced
1/4 cup diced green chiles
1/2 cup cottage cheese queso*
1/4 cup chopped cilantro
Cottage Cheese Queso:
Blend the following until smooth and creamy:
1/2 cup low-fat cottage cheese
2 tbsp reduced-fat shredded cheese
2 tbsp nonfat milk
Pinch of taco seasoning
Instructions
Cook the beef
Brown ground beef in a skillet over medium heat. Drain excess fat. Add taco seasoning and a splash of water, then simmer for 2β3 minutes.Assemble the crunchwrap
On a large tortilla, layer:1/4 of the beef
1 tbsp green chiles
2 tbsp cottage cheese queso
2 tbsp shredded cheese
Lettuce, tomato, and cilantro
Top with a small tortilla
Fold edges of the large tortilla up over the small one to form a sealed wrap. I like to use a little water to help the edges stick.
Toast it up
In a nonstick skillet over medium heat, cook seam-side down for 2β3 minutes until golden. Flip and cook the other side.
