Ingredients:

  • 1 lb grilled chicken (or your favorite protein)

  • 1 bag frozen roasted corn

  • ½ red onion, chopped

  • 2 limes

  • ÂĽ cup plain nonfat Greek yogurt

  • 1 tbsp light mayo

  • 4 tbsp feta cheese

  • 1 pack @eatsomos Mexican Street Corn White Rice

  • 1 cup frozen cauliflower rice

  • Fresh cilantro, chopped

  • ~3 tsp TajĂ­n seasoning

  • Cooking spray

Directions:

1. Cook your protein
Grill, bake, or air fry your chicken and season to your liking. Slice or dice once cooked.

2. Sauté the veggies
In a skillet over medium heat, spray with cooking oil and add frozen corn, chopped red onion, and juice from ½ a lime.
Cook until heated through and slightly charred (about 7–8 minutes).

3. Make the creamy street corn sauce
In a small bowl, mix together:

  • ÂĽ cup Greek yogurt

  • 1 tbsp light mayo

  • Juice from the remaining ½ lime

  • 1 tsp TajĂ­n
    Stir until smooth.

4. Mix it all together
Add the sauce to your skillet with the corn and onions. Toss well until everything is coated and creamy.

5. Prep your bowls
In each of 4 containers, layer:

  • ÂĽ cup frozen cauliflower rice (steamed)

  • ÂĽ cup SOMOS Mexican Street Corn Rice (heated)

  • ÂĽ of the creamy corn mixture

  • ÂĽ of your chicken

  • 1 tbsp feta

  • Fresh cilantro + TajĂ­n

  • Lime wedge on the side
