sundried tomato gnocchi
A super easy and delish weeknight meal full of cauliflower gnocchi, sun dried tomatoes, veggies, turkey sausage – oh my! If you’re looking for a lower fats meal, try subbing the turkey sausage for 99% lean ground turkey. We love a versatile recipe! Serves 3.

Ingredients:
1 bag of Cauliflower Gnocchi
1/3 cup Unsweetened Almond Milk
3 cups Spinach
1 medium Zucchini, chopped
25-30g Sun Dried Tomatoes
5 oz pan fried Turkey Sausage
⅓ cup Parmesan Cheese, Grated
4 oz Broccoli
.5 tablespoon Extra Virgin Olive Oil
Salt, pepper, minced garlic
Directions:
Prep your cauliflower gnocchi: I like to air fry ours at 400* for 12 minutes. This gets them super crispy on the outside, but soft on the inside! Make sure you use cooking spray to keep them from sticking to the airfryer, and shake throughout cooking.
While your gnocchi cooks, start with the rest of your ingredients.First cook your turkey sausage. Measure out your sausage and add to a greased pan. Cook through. Drain excess liquid and remove the sausage from the pan.
After the sausage is cooked, in the same pan saute your zucchini, broccoli, and sun dried tomatoes. Add .5 tbsp of oil to the pan, your chopped veggies, and salt, pepper, and minced garlic. I season with the heart for this recipe. 🙂
Once the veggies are sauteed, add your sausage back in, along with almond milk and parmesan cheese. Let simmer until the sauce thickens. Add in spinach slowly and continue mixing all ingredients until the spinach wilts, and then add in gnocchi. Top with shaved parm and enjoy!
