full day of eats (10.30.24)

Here are all of the recipes and details for my full day of eats on October 30th!

Pre-breakfast: Bobo’s Oat Bite & Alani Nu

Breakfast: Dave’s Killer Bread whole grains toast, Good Culture Cottage Cheese, eggs, and fruit. I like topping my eggs with Maldon Sea Salt! I also had some Wandering Bear Cold Brew with creamer.

Lunch: Tuna Sandwich with Safe Catch Tuna!! My all time favorite. You can grab it on Amazon or at Costco. I mix my tuna with Good Culture cottage cheese instead of mayo for additional protein, and then some relish and ranch seasoning. So good! I had mine on sourdough.

Snack: Obviouslyyyy a chomps & a string cheese! My favorite — CARchuterie, lol.

Dinner: Easy beef stir fry! Here’s what I did:

Easy Beef Stir Fry

Ingredients:
– 1 lb lean ground beef
– 1 bag frozen stir fry veggies
– 1 bag frozen rice (or any microwaveable rice)
For the sauce:
-1/4 cup hoisin sauce
-3 tbsp soy sauce
– 1 tsp sesame oil
-1/2 tsp honey
-garlic powder, ginger powder, pepper, and salt

Directions:
in a skillet, brown your beef. while the beef browns, prep the microwaveable veggies and rice.
once your beef is browned, pour over your sauce and let it thicken a bit. then add in your veggies, and mix well until everything is coated in the sauce.
divide the beef mixture into four equal portions and serve over your rice! i top with sesame seeds as well.

Dessert: Chobani Flip yogurt!
