pickled onions
Pickled red onions are one of my FAVORITE ways to dress up a meal. These are so easy and great to have on hand for salads, sandwiches, bowls, tacos—you name it! This recipe makes 6 servings.

Ingredients:
1-1.5 red onion, thinly sliced (depends on the size of the onion)
½ cup apple cider vinegar
1 cup water
1 tbsp sugar substitute (I used Truvia)
1.5 tsp salt
Directions:
In a large jar or several smaller jars (or microwave safe container) mix apple cider vinegar, water, sugar, and salt.
Microwave for 30 seconds and stir. You’ll want to make sure all of the sugar and salt is dissolved, so microwave in 30 second intervals and continue stirring. Once everything is dissolved, add onions to the hot vinegar mix.
Allow onions and mix to cool to room temperature for a bit and then cover and refrigerate.
Allow onions to pickle at least a few hours before serving - but preferably at least a day! They keep getting better with each day, so continue to enjoy throughout the week. That’s it!
