Ingredients:
1 lb lean ground beef (94/6)
3 bell peppers, chopped
1 small white onion, chopped
1 small zucchini, chopped
1 tbsp olive oil
2 garlic cloves, minced
4 tsp taco seasoning (Siete is my go-to)
¼ tsp salt
1 tsp black pepper
1 (8 oz) can of tomato sauce
2 cups jasmine rice, cooked
1 cup shredded cheddar cheese (feel free to use reduced-fat for a lighter option)

Directions:
Cook the Ground Beef
In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Once browned, drain any excess fat to keep things light.Add Onions and Peppers
Stir in the chopped onion, zucchini and bell peppers. Season with taco seasoning, salt, and pepper. Cover the skillet and let it cook for about 5 minutes, allowing the vegetables to soften.Finish with Garlic and Tomato Sauce
Add the minced garlic and the tomato sauce to the skillet, stirring everything together. Cover again and let it simmer for another 5 minutes to let those delicious flavors meld.Assemble Your Bowls
Divide cooked jasmine rice between your bowls (or meal prep containers!), then top with the beef and pepper mix. Sprinkle with cheddar cheese for the perfect finishing touch. Pro tip: if you like your cheese melty, pop each bowl in the microwave for 15 seconds.
