salted caramel & chocolate pancake bites

Yesterday I got hit with a crazy salted caramel and chocolate craving (my all time favorite), but with no actual candy around the house I decided to improvise AND keep it macro friendly! This is legitimately only 4 ingredients, and wildly I had them all on hand in the pantry. Makes 12 full sized “muffins” but like…pancakes? Lol.

Macros for one: 11.9g C | 2/7g F | 6.8g P

Ingredients:

  • 2 cups @kodiakcakes Dark Chocolate Pancake Mix

  • 1 scoop chocolate protein powder

  • 1 &1/3 cup water

  • 55g of @lilys_sweets Salted Caramel Chocolate Chips

Directions:

  1. Preheat the oven to 350*

  2. Add pancake mix, protein powder, and water to a bowl and mix until combined

  3. Divide evenly into a greased muffin tin

  4. Top each of the bites with an even amount of your salted caramel chocolate chips

  5. Bake for about 25-30 minutes. Mine took closer to 30 minutes and I like them a little gooey on the inside

  6. When they’re done, allow them to cool on a wire rack. I also sprinkled a little sea salt on top of these. Store in an airtight container in the fridge!

    **these are great with a little peanut butter drizzled on top**
