Samoa Cookie Date Bites

If you love Samoa cookies but want something a little lighter and made with simple ingredients, these Samoa Date Bites are such a good treat to keep in the freezer.

They’re naturally sweet from Medjool dates and topped with pbfit, dark chocolate, and coconut for that classic Samoa flavor combo. The freezer turns them into a chewy, caramel-like bite that feels super indulgent while still fitting into your macros.

They take about 10 minutes to prep, and then the freezer does the rest.

Perfect for when you want a quick deficit dessert that actually satisfies a sweet tooth!!

Ingredients:

Makes 16 bites

  • 16 Medjool dates, pitted

  • 16 tbsp PB Fit, mixed with water to creamy peanut butter consistency

  • 75g mini dark chocolate chips, melted (i use about 1 tsp of coconut oil to help with melting!)

  • 8 tsp shredded coconut flakes (about ½ tsp per bite)

  • Flaky sea salt

Instructions:

  1. Flatten the dates
    Place pitted Medjool dates on a parchment-lined baking sheet. Use the bottom of a cup to gently press them flat.

  2. Add toppings
    Spread about 1 tablespoon of the PB Fit mixture onto each flattened date.

  3. Add chocolate + coconut
    Drizzle the melted dark chocolate over each date and sprinkle with ½ tsp coconut flakes.

  4. Freeze
    Place the tray in the freezer for about 15–20 minutes, or until the chocolate has set.

  5. Finish with salt
    Sprinkle a small pinch of flaky sea salt on top before serving.

  6. Enjoy
    Store in the freezer and grab one whenever you want a sweet treat. I usually let mine sit out a few minutes before I eat it!
