mexican inspired street corn salad
The summer of salads! Street corn🤝🏻salad – the perfect combo for your summer lunches! Serves 4 for “side” salads, but easy to double to make full sized lunch or dinner portions. We added chicken to make it a meal!

Ingredients:
Salad:
1 cup Corn
4 cup chopped, Kale
4 ounce Avocado
4 oz Fat Free Feta
162 g Tomatoes, chopped
1 cup Black Beans
⅓ cup Red Onion, diced
Squeeze of lime
1 tsp Trader Joe’s everything but the elote seasoning
56 gram Mexican Style Street Corn Flavored Tortilla Chips (or whatever flavor tortilla chips you want)
Dressing:
1/2 cup Fat Free Greek Yogurt
½ tsp Olive Oil
Juice of 2 Lime
¼ cup Cilantro
2 cloves Garlic
¼ tsp Salt
¼ tsp Ancho Chipotle Powder
Directions
Add rinsed and chopped kale to a large bowl, and massage with a pinch of salt, lime juice, and a spritz of EVOO until the leaves are soft. Add in all of your chopped veggies and cheese. Set aside.
Prep your dressing. In a food processor or blender, all add ingredients and blend until the cilantro leaves are finely chopped. You can add a little water, more lime juice, or EVOO (just remember to adjust macros) to your dressing if you like it with a thinner consistency.
Once dressing is done, toss your salad in the dressing. Top salad with elote seasoning and crushed tortilla chips. Enjoy! Pairs great with chicken seasoned in the chili lime seasoning. 🙂
