tomato, basil, & garlic pasta

I think this account may as well be a pasta stan page at this point, and I am here for it. This garlic tomato pasta was DELISH and super easy. Only required two pans and took less than 20 minutes! We added some grilled chicken on top to make this a well balanced meal. Serves 2, macros listed per serving.

MACROS: 49g c / 6g f / 9g p

Ingredients:

  • 4 oz dry whole wheat pasta

  • 1.5 medium tomatoes, chopped

  • 4 tsp minced garlic

  • 3/4 cup unsweetened almond milk

  • ½ cup reduced fat mozzarella shredded cheese

  • 1/3 cup chopped fresh basil

  • 1 cup chopped spinach 

  • 1 tbsp olive oil

Directions:

  1. Chop the tomatoes in a few larger pieces and add to a large pan with olive oil, lots of salt, and pepper. I also added in some oregano. 

  2. Leave to simmer, and while it does that, cook your pasta. 

  3. After 3-5 minutes, add the minced garlic to the pan with the tomatoes & continue to simmer for 5-6 minutes

  4. Add in a little pasta water, followed by your almond milk, stir and let simmer for a few more minutes.

  5. Once the sauce looks to the thickness of your liking, drain the pasta, add to the pot, dump in your cheese, mix, and then add in the chopped basil and spinach. 

  6. Season with a little more salt and pepper before serving and enjoy!
