Ingredients:

  • 2 cups Organic Girl fresh spinach, roughly chopped

  • 1 can (14 oz) artichoke hearts, drained and chopped

  • 1 cup low-fat cottage cheese

  • 1 cup plain nonfat Greek yogurt

  • 2 tbsp whipped cream cheese

  • 1/2 cup reduced-fat shredded mozzarella

  • 1/4 cup grated parmesan cheese

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp crushed red pepper flakes (optional)

  • Salt and pepper, to taste

  • Optional: squeeze of fresh lemon juice or a pinch of lemon zest

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a skillet, sauté Organic Girl spinach for 2-3 minutes until wilted. Remove from heat. Drain any excess moisture.

  3. In a mixing bowl, stir together:

    • Cottage cheese (you can blend if the texture freaks you out)

    • Greek yogurt

    • Whipped cream cheese

    • Garlic powder, onion powder, red pepper flakes, salt, and pepper

  4. Fold in the wilted spinach, chopped artichokes, half the mozzarella, and half the parmesan.

  5. Spread mixture into a small baking dish and top with the rest of the mozzarella and parmesan.

  6. Bake for 20–25 minutes, until bubbly. Broil the last 2 minutes for a golden top, if desired.

  7. Serve with your fave dippers or spread on toast for a protein-packed snack.
