egg white breakfast bakes
This is one of my go-to high-protein breakfast preps when I want something I can just heat up and go. It’s super customizable, really filling, and takes minimal effort!i
Ingredients (makes 4 servings):
2 cups liquid egg whites (½ cup per serving)
1 cup 2% cottage cheese (I use Good Culture)
4 turkey sausage breakfast patties, cooked + chopped
2 cup shredded hash browns (thawed if frozen)
1 cup bell peppers, diced
¼ cup green onions, chopped
112g shredded cheese (28g per serving — I use reduced-fat)
salt + pepper to taste
instructions:
preheat oven to 375°F
prep your mix
In a large bowl, combine:egg whites
cottage cheese
shredded hash browns
bell peppers
green onions
salt + pepper
assemble
Grease a baking dish (8x8 or similar) OR 4 separate meal prep glass containers and pour in the egg mixture.
Evenly distribute the chopped turkey sausage throughout.top with cheese
Sprinkle shredded cheese evenly over the top.bake for 30–35 minutes if you’re using one large dish, about 25 minutes for smaller containers, or until set in the center.
cool + portion
Let cool slightly, then slice into 4 equal portions and transfer into glass meal prep containers (if you did not bake them separately).
quick tips:
If using frozen hash browns → thaw + pat dry so it doesn’t get watery
