Protein French Toast Bake

Pair your french toast with turkey sausage + berries for a balanced breakfast!

Serves: 8

Ingredients:

  • 1 loaf (12 small slices) bread (i like sourdough)

  • 2 cups liquid egg whites

  • 4 whole eggs

  • 1½ Fairlife 2% Milk

  • 1 scoop vanilla protein powder (Clean Simple Eats)

  • ¼ cup maple syrup or sugar-free syrup

  • 1 tbsp vanilla extract

  • 2 tsp cinnamon

  • Pinch of salt

Optional Toppings:

  • SF maple syrup

  • Fresh berries

  • Mini chocolate chips

  • Turkey sausage on side

Instructions:

  • Preheat oven to 350°F and spray a 9x13 baking dish.

  • Cube bread and spread evenly in dish.

  • In a bowl, whisk egg whites, eggs, milk, protein powder, syrup, vanilla, cinnamon, and salt until smooth.

  • Pour mixture evenly over bread. Press gently so everything gets soaked.

  • Let sit 10–20 minutes (or overnight for max flavor).

  • Bake 45 minutes, covered, and then another 15 minutes uncovered until set and lightly golden. Keep an eye on it! Different breads cook differentl.

  • Cool slightly, slice, and portion for the week.

PRO TIP: if you like a crispier middle, bake your cubed bread for 5-10 min before adding liquid!
