pumpkin chocolate chip protein muffins

I have decided this is officially #FitGirlFall and we’re hittin our macros with CREATIVE recipes! No #BroMeals over here. What better recipe for #FitGirlFall than Protein Pumpkin Chocolate Chip Muffins?! Perfect for a quick breakfast before an AM workout or a late afternoon snack to curb that sweet tooth. Deetz below!

Macros: 11g c / 1g f / 7g p

Ingredients:

  • 1 cup pumpkin puree

  • 1 cup all-purpose flour

  • 1 cup Nonfat Greek yogurt

  • ½ cup vanilla protein powder ( I like iHeartMacros the best!)

  • 2 eggs

  • 1/2 cup dark chocolate chips

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon pumpkin pie spice

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 2 tbsp monkfruit sweetener or stevia

Directions:

  1. Preheat your oven to 370*

  2. Add eggs, Greek yogurt, pumpkin puree, and vanilla extract to a bowl. Whisk until the ingredients are all combined.

  3. Add flour, baking powder, baking soda, pumpkin pie spice, cinnamon, monkfruit sweetener, and protein powder to the mixing bowl, and stir to incorporate everything evenly.

  4. Lastly, add the most of the chocolate chips to the muffins batter. Keep about ½ of them aside to sprinkle on top of each muffin!

  5. Line a muffin pan with muffin liners, and pour the muffin batter evenly into each of them.

  6. Sprinkle the remaining dark chocolate chips on top of the muffins.

  7. Bake the muffins in the middle of the oven for about 20 minutes, or until a toothpick inserted into the middle of a muffin comes out clean.

  8. Leave the muffins to chill on a cooling rack for a bit and then serve. You can also keep them in an air tight container for about 5 days for meal prep
