birthday cake protein bites

It’s Friday after lunch, which is basically the weekend….so BASICALLY it’s my birthday weekend!! 🥳🎂

Kickin’ off the celebrations with some birthday cake protein bites! These are great for a grab & go protein packed snack, or just to satisfy a sweet tooth. I used a combination of reduced fat PB & the honey flavored @1stphorm Nut Butter to give this a little more flavor – but you can use whatever kind of PB you like, as long as it’s creamy or “drippy” 🥜

Macros for one bite: 7g f | 9g c | 7g p (these could vary depending on PB & protein powder you use)

Ingredients:

  • 1/2 cup @1stphorm Honey Nut Butter

  • 1/2 cup reduced fat peanut butter

  • 2 scoops of @iheartmacros Vanilla Protein Powder

  • 1 tbsp coconut flour

  • 1/4 cup of rolled raw oats

  • 1 tsp vanilla extract

  • 3 tbsp sprinkles (more for rolling if you’d like!)

  • 1 tbsp monkfruit sweetener

Directions:

  1. Add both types of PB and vanilla extract to a small bowl and microwave for 30 seconds to get it nice and creamy.

  2. In a larger bowl, combine the rest of your ingredients, and then add your peanut butter and start mixing. I recommend using a wooden spoon, so it doesn’t stick. If your dough feels a little too crumbly, you can add a teaspoon of water until it becomes a little more malleable, but it shouldn’t be super sticky.

  3. If your dough feels solid enough to form into protein bites with a cookie dough scoop, you can start scooping. If it doesn’t, you can refrigerate for 10 minutes to make it easier.

  4. Scoop into even bites. I like the cookie dough scoop because I can ensure they’re very even. I get 16-17 bites per batch.

  5. If you want to add extra sprinkles, you can roll your bites in more, or enjoy as is! Refrigerate until you’re ready to eat them!!
