baked fajita bowls

Another 30 minute meal prep! Love these super easy fajita bowls for a quick and easy prep for the week. Pair them with some rice for a well balanced meal!

Ingredients

1 lb chicken breast, sliced
3 bell peppers
1 onion, chopped
1/4 cup whipped cream cheese
1/4 cup nonfat greek yogurt
1 packet taco seasoning
1 cup reduced fat Mexican cheese
Salt, pepper, and garlic powder to taste

Directions

Preheat your oven to 350*.
Slice or dice up peppers and onions, and chicken, and add to a bowl. Then add your taco seasoning and other seasonings, cream cheese, and Greek yogurt. Mix well until everything is combined.
In four glass meal prep containers that are greased, add in 1/4 of the mixture to each bowl. Cover with aluminum foil.
Bake for 35-40 minutes, covered or until chicken is cooked through. Add the cheese on top of each bowl, recover with foil and cook another 2-5 minutes or until cheese melts!
Remove from oven, add any additional toppings like Greek yogurt, avocado or pickled onions or add over rice and enjoy!
