cauliflower gnocchi pizza bake
What’s better than a one pan, easy clean up meal? One that tastes like pizza! This Cauliflower Gnocchi Pizza Bake is off the charts delicious, only requires one skillet, and is macro-friendly! What more could you ask for??
A couple of notes:
This can be made with regular gnocchi pasta, as well as cauliflower gnocchi–whichever you prefer.
I used a mix of both reduced fat cheese, as well as provel cheese. You can easily substitute all reduced fat to make this more macro-friendly.
I also used turkey sausage–you can sub in regular 93% lean ground turkey to lower the fats macros.
MACROS (SERVES 4, MACROS PER SERVING): 18g f / 26g c / 25g p
Ingredients:
1 jar of Rao’s Marinara (Prego No Sugar Added is also a great macro-friendly swap!)
1 bag of Trader Joe’s Cauliflower Gnocchi
1 small yellow onion, diced
1 small green pepper, diced
5 oz pan fried Turkey Sausage
3/4 cup of reduced fat mozzarella cheese
1/4 cup of provel cheese
30g turkey pepperoni
salt, pepper, garlic powder, italian seasoning
Fresh basil for topping, chopped
Directions:
Preheat oven to 350*. In a cast iron skillet (or enameled cast iron), prep your turkey sausage, onions, and peppers. I like to first fry up the sausage, set aside. Then, dice up the onion and bell pepper, and sauté those with a little EVOO spray, salt, pepper, garlic powder, and Italian seasoning. Once those are cooked through, set aside.
Wipe the pan clean. Then prep your gnocchi. I air fry mine according to the package instructions. Once those are finished, you’re ready to assemble your skillet!
Add a small amount of EVOO to your pan if needed, and then add in 3/4 of your jar of sauce. On top of the sauce add gnocchi, sausage, and peppers and onions. Then add a the rest of your sauce, top with both cheeses and pepperoni. I like to layer the cheese and pepperoni so that some of the pepperoni is mixed in with the melted cheese.
Cover with tinfoil, and add to your preheated oven for 25ish minutes, or until cheese is melted and bubbling. Let rest for a few minutes before serving. Top with fresh basil. Pairs great with a veggie or side salad for a well balanced meal!
