salsa lime chicken (from frozen)

The busy time of year between Thanksgiving and Christmas calls for easy, quick, and delicious recipes in our house, and this recipe is the defection of all of those things. Plus, it’s great for making protein in bulk. Paired with the fact that you can use frozen chicken (hello, I am the president of the “forgot to thaw my protein” club), it just makes it the perfect recipe for when I am busy. This recipe makes 6 large servings!

I like using this chicken for taco bowls, equipped with rice, pickled red onions, avocado, cheese, and some greek yogurt! It’s also great for tacos, wraps, and on top of salads.

A couple of recipe notes:

  • I did not have taco seasoning on hand, so I just made my own. If you want to make this even easier, you can use prepackaged taco seasoning.

  • If you do not have an Instant Pot, don’t fret! You can also use a Crockpot. Directions listed below. However, I love my Instant Pot because it makes this recipe QUICK! I linked the newest version of what I have, and it’s under $100.

  • If you are using thawed chicken, reduce cook time to 17 minutes.

Ingredients:

  • 2 lbs frozen chicken breast or tenders

  • 1/4 cup lime juice

  • 1.5 cups of chunky salsa

  • 1 tsp of each: cumin, paprika, chili powder, garlic powder, and kosher salt (or use prepackaged taco seasoning)

  • 1/2 tsp of pepper

Directions:

  1. Spray the inside of your Instant Pot or Crock Pot with cooking spray.

  2. Add in frozen chicken, then lime juice, seasonings, and salsa.

  3. Close your lid and set to cook. For the Instant Pot, cook on High Pressure Cook for 25 minutes. Set the steam release to SEALED for a natural pressure release. Once it’s done cooking you can manually release any additional steam. For the Crockpot, cover and cook on low for 6-8 hours (or 4-6 if using thawed chicken).

  4. Once chicken is cooked, release any additional steam, and shred in the pot. I like using two forks for this recipe (instead of my usual hand mixer) because I don’t want to sling salsa all over the place.

  5. Divide into 6 servings and enjoy! Reheats well, so it’s perfect for meal prep.
