cheesy chipotle chicken burrito dupe
If you love a Taco Bell cheesy chicken burrito but want something a little more macro-friendly, this is one of my go-to easy meals. It’s high protein, super filling, and still gives you that creamy, cheesy, slightly spicy flavor.
Ingredients (1 Burrito):
1 Carb Balance tortilla
3–4 oz shredded chicken
⅓ cup cauliflower rice
¼ cup diced bell peppers
¼ cup reduced-fat shredded cheese
¼ cup chipotle sauce (recipe below)
Creamy Chipotle Sauce:
¼ cup non-fat Greek yogurt
1 tbsp light mayo (optional, for extra flavor)
½ tsp smoked paprika
½ tsp chili powder
¼ tsp garlic powder
¼ tsp onion powder
Squeeze of fresh lime juice
Salt, to taste
1–2 tbsp water (to thin, if needed)
Instructions:
Cook the veggies
Heat a pan over medium and sauté the diced bell peppers until soft.Heat the filling
Add cauliflower rice and shredded chicken to the pan. Stir and cook until everything is heated through. Season with salt, pepper, or taco seasoning if desired.Make the chipotle sauce
In a small bowl, mix together all sauce ingredients until smooth and creamy. Adjust spice and consistency to preference.Assemble the burrito
Add the chicken mixture to your tortilla, then top with reduced-fat cheese and ¼ cup chipotle sauce.Wrap + toast
Roll into a burrito and place seam-side down in a pan. Cook for 1–2 minutes until the outside is lightly golden and crispy.
