Honey BBQ Chicken Salad
This creamy BBQ chicken salad is an easy, protein-packed lunch that’s perfect for meal prep. It’s made with rotisserie chicken, nonfat Greek yogurt, sugar-free BBQ sauce, fresh corn, and red onion for a smoky, slightly sweet twist on classic chicken salad.
Serve it in a sandwich, wrap, lettuce cup, or with crackers for a quick and satisfying meal.

Ingredients
12 ounces rotisserie chicken, shredded
½ cup nonfat plain Greek yogurt
¼ cup sugar-free BBQ sauce
2 tbsp honey
Kernels from 2 ears of corn, cooked
¼ red onion, finely diced
1 scallion, thinly sliced
½ teaspoon garlic powder
½ teaspoon smoked paprika
Salt and black pepper, to taste
Optional: a squeeze of lime juice
Instructions
Remove the skin from the rotisserie chicken and add the meat to the bowl of a stand mixer fitted with the paddle attachment.
Mix on low speed for about 15–30 seconds, or until the chicken is shredded to your desired consistency.
Add the Greek yogurt, sugar-free BBQ sauce, corn, red onion, scallion, garlic powder, smoked paprika, salt, and pepper directly to the bowl.
Mix on low speed for another 15–20 seconds, just until everything is evenly combined. Be careful not to overmix.
Taste and adjust the seasonings as needed. If desired, stir in a squeeze of lime juice.
Refrigerate for at least 20–30 minutes before serving to let the flavors meld together.
