Crockpot Ranch Chicken

This Crockpot Ranch Chicken is one of those recipes you'll want on repeat for busy weeks. Just toss everything in the slow cooker, let it do the work, and come home to a creamy, protein-packed dinner that's perfect for meal prep or an easy family dinner.

Serves: 4-6

Ingredients

  • 2 lbs boneless, skinless chicken breasts

  • 1 cup nonfat Greek yogurt

  • ¾ can (about 8 oz) cream of chicken soup

  • 1 packet of ranch seasoning

  • 1 cup reduced-fat shredded cheddar cheese

  • 1/3 cup chicken broth (helps keep everything creamy while the chicken cooks)

  • 8 Ritz crackers, crushed (for serving)

  • Optional: chopped parsley or green onions

Instructions

  1. Spray your crockpot with cooking spray.

  2. Add the chicken breasts to the bottom.

  3. In a bowl, whisk together the Greek yogurt, cream of chicken soup, ranch seasoning, and chicken broth.

  4. Pour the mixture over the chicken.

  5. Cook:

    • Low: 5-6 hours

    • High: 2½-3½ hours

  6. Shred the chicken directly in the crockpot using two forks.

  7. Stir in the shredded cheddar cheese until melted.

  8. Let everything sit for about 10 minutes to thicken slightly.

  9. Top each serving with crushed Ritz crackers right before eating.

  • Broccoli

  • Half cauliflower rice + half jasmine rice

  • Green beans

  • Roasted Brussels sprouts

  • Whatever else you want!

Meal Prep Tip

Portion into containers with rice and broccoli. Keep the crushed Ritz crackers in a small baggie or container and sprinkle them on after reheating so they stay crunchy.
