cucumber & sweet pepper pasta salad

When I saw the latest viral cucumber and sweet pepper salad with ginger dressing, I knew I needed to put my own spin on it! I am a summer pasta salad girlie, so obviously turning it into a pasta salad was the way to go! Perfect for easy summer meal prep, this pasta salad combines the sweet flavors of the peppers and cucumber with the zing of a ginger and soy sauce based dressing. Add in a little chicken sausage for extra kick and you’ve got a well balanced meal! This recipe makes 4 servings. Macros will vary based on pasta used and type of chicken sausage used.

Ingredients:

  • 8 oz protein farfalle pasta

  • About 10 mini sweet peppers, sliced

  • 1 medium cucumber, chopped

  • 4 chicken sausages of choice, cooked and sliced

  • 1/4 cup soy sauce

  • 2 tbsp lemon juice

  • 2 tbsp minced ginger paste

  • 1 tsp honey

  • 1 tsp Dijon mustard

  • 2 tbsp olive oil

  • 1/4 tsp Garlic powder

  • Salt and pepper to taste

  • Everything But The Bagel Seasoning to top

Directions:

  1. Prep all of your pasta salad ingredients. Start by cooking the pasta according to directions and then draining. Chop up cucumbers and sweet peppers. Cook chicken sausage according to directions and chop.

  2. Then, prep your dressing ingredients. Combine soy sauce, lemon juice, ginger, honey, Dijon, olive oil, garlic powder, salt and pepper. Mix well.

  3. In a bowl, toss pasta, cucumbers, peppers, chicken sausage, and dressing. Mix well!

  4. Top with as much EBTB seasoning as you’d like. Serve! Can be served warm or chilled. Makes for a great meal prep option on the go!
