High-Protein Crockpot Lasagna Soup

All the cozy, cheesy flavors of lasagna in an easy crockpot soup! Made with lean ground turkey, lasagna noodles, and blended cottage cheese for extra creaminess, this is the perfect dinner for a busy night!

Servings: 4–5
Prep time: 15 minutes
Cook time: 5–6 hours on low or 3–4 hours on high, plus 20–30 minutes for the noodles

Ingredients

  • 1 pound 93% lean ground turkey

  • ½ large white onion, diced

  • 1 tablespoon minced garlic

  • 3 tablespoons tomato paste

  • 1 cup low-fat cottage cheese, blended until smooth

  • 3 cups (24 ounces) chicken broth, plus more as needed

  • 1 (14.5-ounce) can crushed tomatoes or tomato sauce

  • 6 ounces dry lasagna noodles, broken into bite-size pieces

  • 2 handfuls fresh spinach

  • Salt, black pepper, Italian seasoning, and garlic powder, to taste

  • Crushed red pepper flakes, optional

Optional toppings: Fresh basil, grated parmesan, shredded mozzarella, and freshly cracked black pepper

Instructions

  1. Brown the turkey. Cook the ground turkey in a skillet over medium heat, breaking it into crumbles, until cooked through. Drain any excess liquid.

  2. Fill the crockpot. Add the turkey, onion, garlic, tomato paste, crushed tomatoes, chicken broth, and seasonings. Stir to combine.

  3. Slow cook. Cover and cook on low for 5–6 hours or high for 3–4 hours.

  4. Add the noodles. Turn the crockpot to high and stir in the broken lasagna noodles, making sure they’re submerged. Cover and cook for 20–30 minutes, or until tender. Add more broth if needed.

  5. Make it creamy. Turn off the heat and stir in the blended cottage cheese and spinach during the last 5–10 minutes, until warmed through and the spinach has wilted. Taste and adjust the seasonings.

  6. Serve. Ladle into bowls and finish with fresh basil, parmesan, mozzarella, or black pepper, if desired.

Recipe Notes

  • Choose your texture: Use crushed tomatoes for a chunkier soup or tomato sauce for a smoother base.

  • Check the noodles: Cooking time will vary by crockpot, so start checking at 20 minutes to avoid overcooking.

  • Reheating leftovers: The noodles will absorb broth as they sit. Add a splash of broth or milk when reheating to loosen the soup.

  • Extra cheesy finish: Sprinkle mozzarella over each bowl just before serving.
