Hot Honey Chicken Salad

This hot honey chicken salad is the perfect mix of creamy, savory, and a little sweet heat. Itโ€™s packed with protein thanks to the cottage cheese + Greek yogurt base, and made super easy by using a rotisserie chicken. Perfect for meal prep, wraps, crackers, or straight out of the bowl ๐Ÿ™Œ๐Ÿผ

Ingredients

  • Meat from 1 rotisserie chicken (skin removed, shredded)

  • 150g reduced-fat cottage cheese, blended smooth

  • 200g nonfat Greek yogurt

  • 45g reduced-fat shredded cheese

  • 55g fat-free shredded cheddar cheese

  • 45g bacon bits

  • ยผโ€“โ…“ cup sweet heat jalapeรฑos, chopped (adjust to taste)

  • 2โ€“3 green onions, sliced

Seasonings:

  • Garlic powder

  • Onion powder

  • Salt + pepper

For flavor:

  • 2โ€“3 tbsp hot honey (adjust based on preference)

Instructions

  1. Prep the chicken:
    Remove all skin from the rotisserie chicken and shred the meat into bite-sized pieces.

  2. In a blender or small food processor, blend the cottage cheese until smooth.

  3. In a large bowl, combine:

    • Blended cottage cheese

    • Greek yogurt

    • Hot honey

    • Garlic powder, onion powder, salt, and pepper

    Mix until smooth and creamy.

  4. Add in:

    • Shredded chicken

    • Reduced-fat cheese + fat-free cheddar (you can also use all of one cheese, i just didnโ€™t have enough of one or the other!)

    • Bacon bits

    • Chopped jalapeรฑos

    • Green onions

  5. Mix until everything is fully combined and coated in the creamy mixture.

  6. Taste and adjust:

    • Add more hot honey for sweetness

    • Add more jalapeรฑos for heat

    • Adjust salt/pepper as needed

  7. Chill for at least 30 minutes before serving for best flavor.
