pizza stuffed zucchini boats
Rich and I were so impressed with the taco stuffed zucchinis that we decided to try out the same concept with our other favorite food – pizza! Each zucchini boat comes out to 2 points, so we each had two boats and a side of garlic bread. Pure joy, y’all. Recipe below!
Ingredients:
4 zucchini
1 tablespoon olive oil
8 ounces ground turkey sausage
1/2 teaspoon oregano
1/2 teaspoon basil
salt & peppa, to taste
1 1/2 cups tomato sauce sauce
1.25 cups shredded fat free cheese
1/4 cup mini pepperonis
Directions:
Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or spray with cooking spray; set aside.
Cut each zucchini in half horizontally, then carefully scoop out the center of the zucchini, reserving about half, leaving about 1/2-inch of zucchini on the skin.
Chop up the zucchini you reserved when hallowing them out.
Heat olive oil in a saucepan over medium high heat. Add the reserved zucchini and cook until mostly soft. Then add ground turkey sausage, oregano, basil, salt and pepper, to taste. Cook until browned, about 3-5 minutes. Stir in marinara sauce until heated through, about 1-2 minutes.
Add ground turkey sausage mixture to each zucchini and sprinkle with cheese (we did a mix of FF cheddar and mozz), topping with mini pepperonis.
Pop into the oven and bake until the zucchini is tender and the cheese has melted, about 12-15 minutes.
Serve immediately, garnished with some reduced fat parm & parsley if you want!
