teriyaki salmon bowl

I am a firm believer that everything’s better in a bowl – and this teriyaki salmon bowl is a perfect example! This lil’ recipe was so good that we had it twice for dinner this week, and I had it again today for lunch. 😋

  • 1/2 cup Trader Joe’s organic jasmine rice

  • 30g shredded carrots

  • 3 tbsp edamame

  • 1 oz avocado

  • 30g arugula tossed in 1 tsbp soy sauce

  • 3 oz air fried salmon seasoned with garlic & furikake seasoning

  • 2 tbsp G Hughes Sugar Free Teriyaki Marinade

Prep rice and edamame according to the package. For arugula, toss in garlic powder & sautee for a few minutes with a spritz of EVOO in a pan. For salmon, season with garlic and furikake, air fry at 400* for 8 – 10 minutes, depending on how large your salmon is. Once it’s done, add the rest of your ingredients to your bowl, top with salmon, and then drizzle teriyaki sauce on top! Super easy, tastes like a poke bowl, and the salmon is PERFECTLY crisp on the outside and tender on the inside. win, win, win!
