Tomato Basil Chicken Protein Pasta

Ingredients

  • 8 oz protein pasta (I like Brami!!)

  • 1 lb grilled chicken breast, diced or sliced

  • 5 Roma tomatoes, diced

  • 1 small bunch fresh basil, chopped

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • ¾ cup freshly grated Parmesan cheese

  • 1 tsp Italian seasoning

  • ½ tsp kosher salt (plus more to taste)

  • Freshly cracked black pepper

  • Optional: pinch of crushed red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil and cook the protein pasta according to the package directions until al dente. Before draining, reserve about ¼ cup of the pasta water.

  2. While the pasta cooks, add the diced tomatoes, basil, garlic, olive oil, lemon juice, Italian seasoning, salt, and pepper to a large mixing bowl. Toss everything together and let it sit for 5–10 minutes so the tomatoes release some of their juices and all the flavors meld together.

  3. Add the warm pasta and diced grilled chicken to the bowl. Sprinkle in the freshly grated Parmesan and toss everything together until well combined. If needed, add a splash or two of the reserved pasta water to help create a light, silky sauce.

  4. Taste and adjust with additional salt, pepper, or lemon juice if desired.

  5. Top with extra Parmesan, fresh basil, and cracked black pepper before serving.

Tips

  • Freshly grated Parmesan makes all the difference!!

  • This is delicious served warm, at room temperature, or straight from the fridge the next day.

  • For extra freshness, finish with a drizzle of good olive oil and a little lemon zest before serving.
