Viral Baked Salmon Feta Pasta

Ingredients
~20 oz raw salmon
1 pint cherry or grape tomatoes, halved
3–4 cloves garlic (i use frozen cubes which i love or minced would be great for this recipe too)
1 (8 oz) block feta cheese
1 tablespoon olive oil
1 teaspoon Italian seasoning
1/2 teaspoon onion powder
1/2 teaspoon salt, or to taste
1/2 teaspoon black pepper
1 full box Brami Protein Pasta
2 large handfuls fresh spinach
1/4–1/2 cup reserved pasta water, as needed
Red pepper flakes, for serving
Fresh cracked black pepper, for serving
Optional garnish: fresh basil, parsley, or grated Parmesan
Instructions
Preheat the oven to 400°F. Lightly grease a large baking dish with cooking spray or a small amount of olive oil.
Assemble the baking dish. Place the four salmon fillets in the dish and arrange the chopped tomatoes around them. Add the block of feta to the center of the dish and add in the garlic over the tomatoes and salmon.
Season everything. Drizzle with olive oil, then season with Italian seasoning, onion powder, salt, and black pepper. Add red pepper flakes here too if you like a little heat.
Cover and bake. Cover the baking dish with foil and bake for approximately 20–25 minutes, or until the salmon is cooked through and flakes easily with a fork. The thickest part of the salmon should reach 145°F.
Cook the pasta. While the salmon is baking, cook the Brami pasta according to package directions. Before draining, reserve about 1/2 cup of the pasta water.
Make the sauce. Once the salmon is cooked, remove the baking dish from the oven. Use a fork or spoon to gently flake the salmon and mash the softened feta and tomatoes together. Stir everything until it becomes a creamy, chunky sauce.
Add the spinach. Stir in the fresh spinach along with about 1/4-1/3 cup of reserved pasta water. Cover the baking dish again and let it sit for 2–3 minutes, allowing the residual heat to wilt the spinach.
Bring it all together. Add the cooked pasta directly to the baking dish and toss until everything is evenly coated. Add another splash of pasta water if needed to loosen up the sauce and make it extra creamy.
Serve! Divide into five bowls and finish with fresh cracked pepper, red pepper flakes, and your favorite garnish.
