viral cowboy caviar

Better late than never, right? Finally decided to jump on the viral Cowboy Caviar trend and I am kicking myself for doing it sooner! This salsa/salad is packed with alllll the nutrients and is great for meal prep! I’ve been adding it to greens, rice, and even just eating it straight from the bowl. My take on the recipe below! Makes 8 BIG servings.

Ingredients:

  • 3 tbsp, Reduced Fat Crumbled Feta Cheese

  • 1 can Low Sodium Black Beans

  • 1 can Low Sodium Chickpeas

  • 1.5 medium Tomatoes

  • 1 medium Orange bell pepper

  • 1 medium Yellow bell pepper

  • ½ red onion

  • ½ cup Cilantro

  • 1 medium Green bell pepper

  • ½ cup Yellow Corn

  • Dressing:

  • 1/4 cup Olive Oil

  • 2.5 tbsp Red Wine Vinegar

  • 2 limes, juiced

  • 1 lemon, juiced

  • 1 tsp paprika

  • 1.5 tsp chili powder

  • ½ tsp cumin

  • ½ tsp garlic powder

  • ½ tsp oregano

Directions

Rinse your beans, chickpeas, and corn (If it’s canned). Dice everything else up really well, and add all of the veggies + your feta to a bowl. Mix up your dressing, pour over, and mix really well. Serve over salads, as a salsa, with rice and a protein, etc! Also tastes great with avocado added!
