lemon basil rotini
Your favorite disgrace to Italian cuisine is backkk with another pasta recipe! This time we’re cookin’ up some Lemon Basil Rotini – the perfect light and fresh pasta dish for the summer!

Ingredients
1 cup basil, chopped
8 oz Banza rotini
3 tbsp lemon juice
2.5 oz shredded parmesan cheese
12 oz boneless skinless chicken breasts, seasoned with Italian seasoning, salt, pepper, and garlic powder
½ tsp minced garlic
2 tbsp olive oil
White Wine Sauce Ingredients:
2 tbsp white wine vinegar
3 tbsp lemon juice
1 tsp dijon mustard
1 tbsp lemon zest
1/4 Salt, Pepper, Oregano, & Onion Powder
Directions
Prep your chicken first – I use a little EVOO spray and then season with salt, pepper, Italian seasoning, and garlic powder. Cook via your choosing – I pan fried mine until they were cooked all the way through. Remove from pan and chop/let cool.
While the chicken is cooking, prep your noodles according to the package. Once they’re ready drain them and set aside.
In the same pan the chicken was cooked in, add the olive oil and minced garlic, and let simmer for a few minutes. Then, add in the white wine sauce mixture and let simmer for another few minutes until it becomes really fragrant. Add in your drained noodles and toss well. Then add in another squeeze of lemon, the basil, parmesan cheese, and chicken. Mix well until everything is combined, serve with more basil and a lemon wedge!
