Ingredients (Serves 4)

For the tacos:

  • 1 lb 94% lean ground turkey (well seasoned with garlic, salt, pepper, and paprika)

  • 4 Mission Carb Balance tortillas (street taco or fajita size)

  • 4 slices ultra-thin cheddar cheese (like Sargento)

  • Olive oil spray or cooking spray

Toppings:

  • Shredded lettuce

  • Diced tomato or pickles

  • Optional: diced or sautéed onions

For the Light Burger Sauce:

  • 1 tbsp light mayo

  • ¼ cup plain Greek yogurt

  • 1 tbsp yellow mustard

  • 1 tbsp ketchup (go sugar-free for fewer carbs)

  • 1–2 tbsp finely chopped dill pickles

  • Dash of garlic powder

  • Salt, pepper, paprika to taste

  • Small splash of white vinegar

Mix all sauce ingredients in a small bowl until smooth. Adjust seasoning to taste. Keep refrigerated until ready to use.

Instructions

1. Smash the Patties
Divide the ground turkey into 4 equal portions. Press each portion directly onto a tortilla, spreading it into a thin, even layer that covers most of the surface.

2. Cook Meat-Side Down
Heat a large skillet over medium-high and spray with olive oil. Place the tortillas meat-side down in the skillet. Press down gently with a spatula to “smash” the meat into the pan. Cook for 3–4 minutes or until browned and cooked through.

3. Flip & Melt the Cheese
Flip each tortilla so the meat is on top and the tortilla hits the pan. Quickly add a slice of cheddar to the hot meat. Let it melt for 30–60 seconds, then remove from the pan.

4. Assemble & Serve
Top each taco with shredded lettuce, tomato or pickles, a drizzle of burger sauce, and any other favorite toppings. Fold and enjoy warm!
