Ingredients (Makes 4 Crunchwraps)

  • 1 lb 93% lean ground beef

  • 1 packet low-sodium taco seasoning

  • 4 large (10-inch) Carb Balance tortillas

  • 4 small (6-inch) Carb Balance tortillas

  • 1 cup reduced-fat shredded Mexican cheese

  • 1 cup shredded lettuce

  • 1 medium tomato, diced

  • 1/4 cup diced green chiles

  • 1/2 cup cottage cheese queso*

  • 1/4 cup chopped cilantro

Cottage Cheese Queso:
Blend the following until smooth and creamy:

  • 1/2 cup low-fat cottage cheese

  • 2 tbsp reduced-fat shredded cheese

  • 2 tbsp nonfat milk

  • Pinch of taco seasoning

Instructions

  1. Cook the beef
    Brown ground beef in a skillet over medium heat. Drain excess fat. Add taco seasoning and a splash of water, then simmer for 2–3 minutes.

  2. Assemble the crunchwrap
    On a large tortilla, layer:

    • 1/4 of the beef

    • 1 tbsp green chiles

    • 2 tbsp cottage cheese queso

    • 2 tbsp shredded cheese

    • Lettuce, tomato, and cilantro

    • Top with a small tortilla

    • Fold edges of the large tortilla up over the small one to form a sealed wrap. I like to use a little water to help the edges stick.

  3. Toast it up
    In a nonstick skillet over medium heat, cook seam-side down for 2–3 minutes until golden. Flip and cook the other side.
