coconut chocolate chip protein bites (no bake!)

If you’re looking for an easy, no-bake treat to keep stocked in the fridge for the week—this is it. These Coconut Chocolate Chip Protein Bites are made with simple, nourishing ingredients and pressed into a pan so you can slice them into perfect little bite-sized squares.

They’re naturally sweetened, packed with protein thanks to Clean Simple Eats Coconut Cream protein powder, and have just the right balance of chewy, chocolatey, and coconutty. Basically: your new favorite meal prep snack.

Ingredients (1 serving)

  • 1 cup rolled oats

  • 1/2 cup natural peanut butter

  • 1/4 cup honey

  • 1/4 cup maple syrup

  • 1/2 cup Clean Simple Eats Coconut Cream protein powder (2 packets)

  • 1/4 cup shredded unsweetened coconut

  • 1/3 cup dark chocolate chips (I like to use lilly’s)

  • 1/2 tsp vanilla extract

  • Pinch of sea salt

Optional Add-Ins:

  • 1 tbsp chia seeds or ground flaxseed

  • 1 tbsp coconut oil for extra richness

Instructions

  1. Line a small square pan (8×8 works great) with parchment paper.

  2. In a large bowl, mix together all ingredients until fully combined.

  3. Press the mixture firmly into the pan using a spatula or the back of a spoon.

  4. Chill in the fridge for at least 1 hour to set.

  5. Once firm, lift the mixture out of the pan and slice into small bite-sized squares.

  6. Store in an airtight container in the fridge for up to a week or freeze for longer!
