pumpkin chocolate chip cookies

POV: you’re riding the post workout endorphin wave, Lizzo is blasting, and decide to bake pumpkin chocolate chip cookies. This is what happens.

These cookies are easy on the macros, but still so freaking good. I made these for a little get together and they were a hit—not a single cookie was left behind! This recipe makes 26 cookies.

MACROS (per cookie): 5g f/ 4g c/ 5g p

Ingredients:

  • 1 cup 100% Pure Pumpkin Puree

  • 2 large eggs

  • 2 tsp vanilla extract

  • ¾ cup Truvia Sweet Complete Sweetener (or another baking sugar substitute of choice)

  • 2 tsp Pumpkin Pie Spice

  • 2 scoops of protein powder – I used @1stphorm Pumpkin Spice Latte BUT you could also use a vanilla protein and add in additional pumpkin pie spice!

  • 1 tsp baking soda

  • 1 tsp salt

  • 1.75 cups Almond Flour

  • 2 tsp cinnamon

  • 64 g Lily’s Dark Chocolate Baking Chips

Directions:

  1. Preheat oven to 350*. Line a baking sheet with parchment paper or a cookie sheet. Mix wet ingredients into a bowl first (pumpkin, egg, vanilla, and sugar), and then once that is mixed add in all of your dry ingredients. Finally fold in chocolate chips.

  2. Scoop with a cookie scoop into even portions on your cookie sheet. Bake at 350* for 10-12 minutes, depending on how gooey you like your cookies. Enjoy with sea salt, PB, or with your favorite fall drink!

    **Must also dance incredible cringey while baking them.
