healthy oatmeal chocolate chip cookies

I’m not usually a big baker, but for some reason over the last few months when I’ve been stressed, I’ve had an urge to bake cookies. Because I was baking more than usual, I wanted to find a healthier alternative – and these were born! Took me a handful of tries to get it right, but these ended up being so good and even packed more protein than the average cookie! Makes 23 cookies.

Macros (per cookie): 2g f / 12g c / 4g p

Ingredients:

  • 1 teaspoon baking soda

  • 1/4 tsp, salt

  • 1 tsp vanilla extract

  • 1 large egg

  • ½ cup Truvia Baking Blend Sweeter

  • 99 gram Lily’s Milk Chocolate chips

  • 6 tbsp(s) unsweetened apple sauce

  • 1.5 scoop @iheartmacros Vanilla Cream Protein Powder

  • 2 cups Rolled Oats, divided

Directions:

  1. Preheat your oven to 350 degrees F.

  2. Use a blender or food processor, grind 1 cup of the oats into a flour-like texture.

  3. Combine the ground and whole oats, protein powder, baking soda, and salt in a small bowl. Set aside.

  4. In a large mixing bowl, mix together the apple and sugar substitute. Add in the egg and vanilla to the mixing bowl, and mix until combined.

  5. Slowly add the dry ingredients into the mixing bowl, and then stir in the chocolate chips by hand.

  6. Scoop 1 tbsp of cookie dough onto a cookie sheet lined with parchment paper or a baking mat. I used my cookie dough scoop to get the perfect sized cookies!

  7. I gently pressed down the dough just a bit, as it didn’t spread too much on it’s own.

  8. Bake for 8-10 minutes, until the bottoms are just lightly starting to brown.
