street corn beef bowls

flavor-packed bowl with taco beef, roasted sweet potatoes & creamy street corn!! basically my chicken and rice street corn bowls but with beef and sweet potatoes swapped in.

INGREDIENTS:

Roasted Sweet Potatoes

  • 4 cups sweet potatoes, diced

  • 1½ tbsp olive oil

  • ¾ tsp paprika

  • ¾ tsp garlic powder

  • salt & pepper

Taco Beef

  • 1 lb 93/7 lean ground beef

  • 1 packet taco seasoning

  • ¼ cup water

Street Corn Topping

  • 12 oz frozen corn

  • 1 tsp olive oil

  • 2 tsp garlic, minced

  • 2 tsp jalapeño, minced (optional)

  • ¼ cup cilantro, chopped

  • ¼ cup green onions

Street Corn Sauce (lightened)

  • 3 tbsp light mayo

  • 3 tbsp nonfat Greek yogurt

  • 1½ tbsp lime juice

  • ¼ tsp chili powder

  • ⅛ tsp cumin

  • ¼ tsp paprika

Optional toppings

  • avocado

  • cotija or queso fresco

  • tortilla chips

  • tajín

DIRECTIONS:

1️⃣ Roast potatoes
Preheat oven to 400°F. Toss sweet potatoes with oil and seasonings.
Spread on a sheet pan and roast 25–30 minutes, tossing halfway.

2️⃣ Cook the corn
Heat olive oil in a skillet and cook corn 5–8 minutes until lightly charred.
Add garlic and cook briefly. Remove from heat.

3️⃣ Brown the beef
Cook ground beef in a skillet over medium heat.
Add taco seasoning and ¼ cup water, simmer until saucy.

4️⃣ Make the sauce
Whisk together light mayo, Greek yogurt, lime juice, chili powder, cumin and paprika.

5️⃣ Combine corn topping
Mix corn with cilantro, green onion, jalapeño and sauce.

6️⃣ Assemble bowls
Layer sweet potatoes → taco beef → street corn topping. Add optional toppings if desired.
