Another recent eats roundup! These are some of the easy, macro-friendly meals, snacks, drinks, and orders that have actually been on repeat for me lately.

Three years into maintaining a 60-pound weight loss, I’ve realized that the way I eat now is actually pretty simple. I prioritize protein, make meals that help me feel strong and support my workouts, and keep things EASY because life as a working toddler mom is busy. And, of course, I leave plenty of room for eating out, fun foods, and getting ice cream with my toddler.

Here’s what I’ve been eating lately:

Pumpkin Cinnamon Roll Protein Pancake Bakes

One of my newest fall breakfast obsessions. It’s basically a pumpkin protein pancake bake with a cinnamon roll swirl and cream cheese icing, and I make a few at once to have breakfast ready to go.

Steak Tacos

An easy dinner that the whole family can customize with whatever toppings they want.

Here’s how I make them:

what you need:
• Mission Carb Balance street taco tortillas
• sirloin steak, thinly sliced
• avocado oil
• taco seasoning
• shredded lettuce
• pre-made pico de gallo
• chopped red onion
• reduced-fat feta
• fresh cilantro

for the sauce:

• plain Greek yogurt
• fresh lime juice
• Trader Joe’s Everything But the Elote seasoning

how to make them:

Season the sliced steak generously with taco seasoning, then sauté in a hot pan with a little avocado oil until cooked to your liking.

Warm your tortillas, then layer with lettuce, steak, pico, red onion and feta.

For the sauce, just mix Greek yogurt with a good squeeze of lime juice + Everything But the Elote seasoning to taste. Drizzle over the tacos, finish with cilantro and DONE 👏🏼

Per taco: ~140 calories | 14g protein | 12g carbs | 5g fat

Crockpot Ramen

Cozy, ridiculously easy, and exactly the kind of dinner I want when I don’t have time to stand over the stove.

Chicken Caesar Sandwiches

Chicken Caesar anything is always a yes for me, and turning it into a sandwich makes it such an easy lunch or quick dinner.

Here’s how I make them:

Ingredients:

  • 2 slices sourdough bread

  • 1 Just Bare breaded chicken patty

  • Chopped romaine

  • Thinly sliced red onion

  • Sliced tomato

  • Grated or shaved Parmesan

  • Bolthouse Farms Caesar dressing

Directions:
Cook the chicken patty according to package directions until crispy. Toast the sourdough, if desired. Toss the chopped romaine with Caesar dressing, then layer the chicken patty, dressed romaine, red onion, tomato, and Parmesan onto the sourdough. Close it up, slice, and enjoy!

Creamy Pesto Pasta

This one was completely born out of throwing things I already had in the fridge and freezer together, and somehow it became a dinner my toddler loved. I called it Green Goblin Pasta to get him excited about all the green veggies, and it worked. 😂

If there’s one thing about me, buffalo chicken is going to find its way onto the menu. This is an easy, creamy, protein-packed pasta that’s perfect for meal prep or dinner.

Ginger, Salmon + Sweet Pepper Bowls

Bascially these are salmon, sweet peppers, cucumber, shredded carrots, avocado, and edamame, tossed with ginger dressing, chili crunch, Everything But the Bagel seasoning, lime, and a little salt. SO GOOD.

Snack Plates

When I don’t feel like cooking lunch, snack plates save the day. I usually build mine around a protein and then add whatever fruit, veggies, crackers, dips, cheese, or other random things sound good that day.

Ice Cream With My Toddler ♡

And because this is what balance actually looks like in my life, we end a lot of our days getting ice cream together!!

Maintaining a 60-pound weight loss for the last three years hasn’t meant eating perfectly or trying to make every single thing I eat as low-calorie as possible. Most of the time, I’m eating meals that prioritize protein, help me feel good and strong, and make sense for my goals. And sometimes I’m just getting ice cream with my toddler because those moments matter, too.
