asian inspired glazed meatballs
However I AM giving you all a gift – these Asian Glazed Meatballs! This are so perfect for meal prep and the sauce is just chef’s kiss. I paired them with baby bok choy and jasmine rice for dinner, but swipe to see how I meal-prepped them for lunches! Makes about 26 meatballs!
chicken speidini skewers
These are perfect for meal prep, delish, and SO macro friendly! These pair amazing with salads, pasta, on a sandwich, you name it. Light and lemony flavor with a protein packed punch. Recipe serves 4!
chicken parmesan spaghetti squash
Spaghetti squash is one of my favorite ways to lighten up my favorite pasta dishes. Don’t get me wrong – the real deal is ALWAYS going to be my first choice, but it’s all about balance! Some days we eat ALL the pasta and some days we swap out a veggie for the noods. Luckily this Chicken Parm Spaghetti Squash is ALMOST as good as the real thing to satisfy those pasta cravings. Serves 2!
chicken parmesan pasta bake
Think chicken parm + meal prep casserole, and you’ve got this recipe. Great for meal prepped dinners, or feeding a group! Super customizable too – you can use reduced fat cheeses (or less cheese all together) to make this recipe lower in fat or substitute spaghetti squash instead of noodles for a low carb option!
twice baked potatoes
ICYMI! These bad boys were one of the sides for Rich and my Valentine’s Day dinner, and DANG were they good. More protein than your average twice baked potato, and ZERO grams of fat! The perfect side dish for when you have some carbs to play with, or loading it up with more veggies and protein could make this a great lunch as well! Serves 4 (each serving is ½ potato).
sundried tomato gnocchi
A super easy and delish weeknight meal full of cauliflower gnocchi, sun dried tomatoes, veggies, turkey sausage – oh my! If you’re looking for a lower fats meal, try subbing the turkey sausage for 99% lean ground turkey. We love a versatile recipe!
sheet pan chicken sausage & veggies with a lemon dill drizzle
On my Instagram account, sometimes I feel pressure to post new and exciting and unique recipes multiple times a week. I was thinking about this (again) recently because we have been super busy, and I just haven’t had a lot of desire to look involved meals!
fish taco bowls
Fish tacos…but make it a bowl. This meal was super easy, and very macro friendly! Air frying the tilapia was chef’s kiss. This recipe makes two, but it’s super easy to double it to meal prep for the week!
lighter penne alla vodka
One of my favorite things to do in the kitchen is recreate recipes from restaurants that I have loved, but with a healthier spin. This is one of those recipes! The addition of shrimp, mushrooms, and air fried cauliflower gives this pasta a bit of a twist on regular Penne alla Vodka, and using @fibergourmet keeps it on the lightened up side. Recipe below! Serves 4. 🍝
cilantro avocado salmon bowl
Y’all already know my love for foods in bowls. I am not sure when the bowl obsession started, but if I can make it a bowl – I’m game. The thing I love most about them, is that it’s easy to ensure you’re hitting all of your macros, but can get creative while swapping out the base, protein, fat sources, etc. One of my favoriteeee bases is my “Chipotle Rice Dupe” because it pairs so well with all sorts of flavors and is so easy to make. Read below for the rice recipe, and to see what all is in this DELISH salmon bowl!!
fig & pancetta pizza
I never met a pizza I didn’t like – including this Fig & Pancetta Pizza!

Stuffed peppers: just about everyone’s made this dish, and for good reason! It’s easy, customizable for just about any preference or diet, and it makes for great leftovers! We made these for the first time in awhile this week, so I thought I would share my version!
pizza stuffed zucchini boats
Rich and I were so impressed with the taco stuffed zucchinis that we decided to try out the same concept with our other favorite food – pizza! Each zucchini boat comes out to 2 points, so we each had two boats and a side of garlic bread. Pure joy, y’all. Recipe below!
teriyaki salmon bowl
I am a firm believer that everything’s better in a bowl – and this teriyaki salmon bowl is a perfect example! This lil’ recipe was so good that we had it twice for dinner this week, and I had it again today for lunch. 😋

This spicy shrimp bowl requires minimal cooking and is so freakin’ good. We have it at LEAST a few times a month. Sometimes every week. It’s so easy & macro friendly!
